I confess.  I am not capable of working from home.  There’s just always something else more fun that needs to be done first.  Things like duct taping the windows (draft control), cleaning the oven, vacuuming, and of course, updating this blog!

This weekend I had a few hefty documents that I had to review and comment on for a Monday morning meeting.  Not something I can wing, even on my best BS days, so I had to hunker down and get through them.  It is now Sunday night, and instead of working on that, here I am, compiling my notes on my latest baking endeavor.  Sometimes priorities get shifted….such is life.

Oranges

With it being winter, tis the season for oranges!  Yay!  I was excited.  I usually just like to eat them peeled and segmented, but when one of my favorite food blogs, Joy The Baker posted a Cranberry Orange Pecan Coffee Cake, I was totally there.  It also helps that I had exactly 2 cups of fresh cranberries living in my fridge with nowhere to go.  Perfect timing!

I do have to get back to my review (can’t stall forever), so I present you with just simple kitchen notes.  I followed her recipe to the T with no substitutions or adjustments.

The Pack Rat makes some Stuffing Pockets for Dinner

I am not a very sentimental person, but I am a pack rat.  Not to say nothing holds a special meaning to me.  Plenty of stuff does, but I hold on to things because I’m more afraid that once I throw it away, I’m going to need it again sometime in the far future.  I like to be prepared.

In this day and age with everything going electronic, it becomes harder to hold on to stuff, just in case.

But there I was, staring at my computer screen at work.  My work emails automatically move email messages from my inbox to a retention box, where it will stay for another month before being automatically deleted.  Forever.

Yes, I have lost many a email that I later did find out I needed again because I didn’t move it to an archive folder.  Bygones.

So, there I was, staring at the screen.  I was going through my retention folder, double checking to see if I had any messages I wanted to save (slowly learning my lesson).  The latest chunk of emails up for permanent deletion were responses to a goodbye email I sent to the department before I moved to my current one.  All of them wished me luck, and I was touched by the people who took the time to respond.  I wanted to keep them.  If they were on paper, I’d tuck them away in a drawer somewhere (neatly tied together with some ribbon, of course).  But, I knew they had to go.  So I went through them once again, and exited the folder.  I always have trouble letting go…and now my computer does it for me.

Now I have my eye on just one last email.  It has no substance, just a silly exchange.  I just feel compelled to keep it, but know I really should not.  I guess I’m a little more sentimental than I thought.  It will end up in that Retention folder in about a month, and then my computer will get rid of it for me.  Bygones.

But until then, speaking of cleaning house, I am still chipping away at the leftover food stuffed in my fridge from Thanksgiving.  The best part about leftovers?  When you really don’t feel like cooking, you can load up a plate with some leftovers and pop it in the microwave.  Or, once you get tired of that, you can get a little fancier.

Inspired by my friend, the Curious Cuisinier who recently made some empanadas from some leftover sweet potatoes and Crescent roll dough, I decided to make something out of puff pastry and leftover cornbread stuffing.

Big Brother and the Cookie with the Long Name: Oatmeal Pumpkin Cranberry Pecan Cookie

I have a secret to confess.  I watch Gossip Girl.  Damn you Netflix!  I’m up to season 4, and I have to say, I can only watch it a few episodes at a time.  I have to put it down because I am just so peeved at all the characters.  But, for whatever reason, I pick it back up again after a break.  My longest break was many months when the whole Ben and Serena thing was starting up.  My eyes were rolling so much,  I was getting worried that they were going to get too loose and fall out of my head.

As much as I hate the show, I find myself strangely drawn back to it.  Why?  I have no idea.  But, I do think Gossip Girl is onto something larger in meaning than it realizes.

In this age of the internet generation, privacy is apparently a lost concept.  With all the checking in, Facebook, Twitter, it is possible to know where people are at any time of the day.  In many utopia centric science fiction/fantasy novels, the general theme revolves around that loss of privacy to a big brother type governing structure in order to keep everyone in check and limit the unpredictable.

In the case of Gossip Girl, she is this unknown mystical big brother who relies on this culture she has perpetuated on her followers to keep tabs on each other by constantly reporting back and making public any actions of their peers.  In essence, there is no privacy and everyone is constantly being watched.

The show starts with these kids in high school, but after 4 seasons, and presumably 4 years, you would think they would grow out of the meddling in each others lives.  I love (sarcasm alert) how they think that by not stopping to think of the context of whatever snippet of conversation they overhear they are doing their friends a favor by running straight to them or to Gossip Girl to report the snippet of conversation.  As if this is them showing their love for each other.  Maybe I’m just old fashioned, where I relish privacy and have a head on my shoulders that tells me that maybe I should know the whole story before running off and reporting bits and pieces to “save” a friend.  It’s called processing and thinking, something these kids should try sometime (especially Serena…geez, I have never disliked a character as much as I dislike her…but that is another story completely).

You think I’ve read too much into this?  Maybe it’s time for another extended hiatus from the show.

Enough of that.  Back in the real world, I decided to make some cookies for my company’s Fall Festival.  It was originally supposed to be a contest where the baked good had to have either pumpkin and/or maple syrup in it.  That was easy.  I was going to make my variation of maple nutmeg shortbread cookies, but ended up going with some Oatmeal Pumpkin Cranberry Pecan Cookies instead.

This cookie is yet another variation of my staple oatmeal raisin cookies.  I just made some slight additions.

Let Calorie Fest 2012 Begin! First Up: Thanksgiving Dinner

This year, with my mother on holiday in China, it was just going to be me, my brothers, my father and my sister in law for Thanksgiving.  Just 5 people, but the most important people in my life.  So, I moved Thanksgiving dinner to my place and cooked them a hearty meal that didn’t just involve one pot.

But first…tradition.  For a few years now, my brother, Andrew, my father and myself always ran the Rockland 5 mile Turkey Trot on Thanksgiving morning.  I finished 45 seconds slower than last year, but I was also pacing a little more conservatively.  I also out sprinted a 10 year old boy to the finish…much to be proud of!

After the race, my other brother, Jeff, made us all Oatmeal Raisin cookie pancakes (Stew Leonard’s sells 2 cup packages of Butter milk!), and then I got to work.

A Short Trip in Memphis: BBQ, Blues and Ducks!

Last week was an interesting week for me.  I went to Memphis!  What made this trip interesting, besides being in Memphis, was that it was the first time I traveled alone, to attend a work related function, alone.

I am a very shy person.  If I did this trip 5 years ago, I would have been super stressed out about it and probably tried to hide for the most part.  I have come a long way these past few years.  Now, as much as I may have wanted to hide, I didn’t and even I surprised myself.  Plus it was a workshop attended by 15 people, so hiding really wasn’t really an option.  I networked, mingled and made some new contacts which will all come in handy in the near future.  Success, I hope!

Since I got back on Friday, and spent the entire weekend doing my part to help the economy by buying a new wardrobe to fit the new (and slightly more substantial) Sylvia, I didn’t have a chance to make anything.  Except my lunch for tomorrow, which is an almond butter and honey (ran out of jam, so a local honey had to suffice) sandwich to be paired with an apple.

Gluten-less Brownie Experiment: Take 2 (Black Bean Brownies)

On Saturday, I went with my friend Shelley to try out this meetup group in the city.  This group was going to do a photography walk through Central Park to capture the fall foliage.  I’ve never done a meetup before, so I figured, why not.

The walk started at the Grand Army Plaza on the Southeast corner of the park (59th & 5th).  It was a large group of people, some knew each other from previous meetings, and others, like us, were new.  But it seemed everyone kind of kept to themselves for the most part.  While it was nice to have a guided walk through the park, there is a reason why I don’t like group photography tours.  Too many people going for the same shot.  My back was bothering me so, I definitely didn’t see the need to join everyone in jockeying for the shot.  Didn’t matter anyway, the park was so crowded, and the weather was really overcast and the colors from the trees were incredibly dull.  I felt like I could do better back at home with a romp around Rockefeller.

So, the next day I went for a run.  Sunday is my run day.  Regardless of whether or not I ran at all during the week, I always try to get at least 6 miles in on Sunday.  I have my usual loop through the Rockefeller Preserve which presents the many faces of what you find in that area.  From the busier wider lanes to the farm area, the lake, and the more remote.  Too bad I can’t run with my good camera.

With the fall foliage in full bloom, and the remnants of the damage done by the monster storm in full display, the colors were still muted, but at least the experience was much more enjoyable.  When it’s just you, the dog and the occasional cow, not only are you visually enjoying the beautiful fall day, but physically basking in the quiet calmness also.  And that is one of the reasons I do enjoy living here in the ‘burbs.

After a good run, I decided I was in the mood for a brownie.  But I don’t think a regular brownie was a good idea.

I can’t tell if the 10 pounds I gained over the summer were from muscle gain from crossfit and marathon training or weight gain from eating like I had the metabolism of a woman 10 years younger than me.  It is probably a combination of both, but still, I had to start making some changes if I was going to indulge.

Black bean brownies have popped up recently, and I’ve always meant to try it.  After an exhaustive search, I finally found a recipe I could live with.  It was for a black bean brownie, which happens to be gluten free (which continues my gluten free brownie experimentation) without any weird ingredients that cannot normally be found in a regular pantry and can be vegan, depending on the type of chocolate chips and sweetener you use.

One Girl, One Squash, Two Meals

It’s rough being a single gal who cooks her own food.  I mean, I could make it easy and just do take away, but that costs money and calories.  So, I cook, to save money, calories and to practice.

However, unless you have single serving sized pots and can figure out a way to just buy a single stalk of celery or 1/8th of a squash, whatever you end up making will most likely feed about 4 people.  Which then just means, you are eating that one dish for lunch (or dinner) for the next four days.  I love chili (which I can always feed way more than 4 people with), but after day 5, I’ve had enough.

So, when I randomly decided to buy a small acorn squash at the farmers market a couple of weeks ago, I really hoped I liked acorn squash, because I was going to be eating a lot of it.

To help break the monotony of a singular dish, I decided to keep the prep of the squash simple so it can be incorporated into a couple of different things.  Besides, as I was perusing the internet for ideas of what to do with Acorn squash, most of them involved a ton of butter and sugar.  Not for me!  So, low and behold, Acorn Squash, two ways, 4 meals.

Keeping an Open Mind: Peanut Butter Pickle Sandwich

Let me start off by saying, until now, I was not a fan of the traditional pickle.  When I say pickles, I mean the ones I get to go with a sandwich because I do love me some pickled turnips (like the stuff you get at Chinese restaurants).  I was just never fond of of the sour brininess of it all.  Kosher, dill, half sours, I just never cared for them.

Then I read an article in the New York Times recently about Peanut Butters unrealized buddy, the pickle.  While many of the people he interviewed about the little known Peanut Butter Pickle Sandwich immediately dismissed the idea, the gears in my head were already turning.  Where can I get Bread-and-Butter Pickles?  Do I have bread at home (I always have peanut butter)?  When can I try this?

I found a jar of Bread-and-Butter pickles at my Trader Joe’s, and yes, I did indeed have bread at home.  So, I threw together a Peanut Butter (Trader Joe’s creamy unsalted natural peanut butter) Pickle Sandwich (Bread: 15 Grain).  I thought it was amazing.  The Bread-and-Butter pickles, unlike Kosher or dill, were sweeter and less briny and complemented the peanut butter well.  The crunch of the pickles also lent a very nice texture contrast to the more gooeyness of the peanut butter.  Why would anyone not like this?

But then it got even more awesome.

Baked Apples Take 2: Baked Apple Crumble

Fall is upon us!  I apparently missed apple picking this year, but alas, it doesn’t stop me from baking them!  It’s funny, I eat them year round, but I won’t bake with them until the Fall.  There is always a time and place for everything.

Still reeling from all the deliciously bad for me vacation food, I opted to give baked apples another go.

Remember last year, when I did a stuffed Baked Apple?  Well this one is different, and I think I like this one better.
